Eggs have been a constant for me throughout this long phase of lockdown, thanks to the coronavirus! Having no access to chicken, fish or mutton from the nearby meatshop, and onlines stores out of stock always, my major intake of animal protien was via eggs.
There are many egg-lovers out there who can rely on eggs for their daily diet. Although you love them so much, how many egg dishes can you prepare well?
Here’s a list of 5 simple egg recipes you must know, with instructions on how to make them well. Try them and let me know which is your favourite!
Sunny side up
The simplest and prettiest of them all! For this, all you need are: a frying pan, cooking oil, an egg, and seasoning.
Heat up a frying pan and add 1 tbsp oil. Then break an egg from the centre and drop it in the centre of the pan. Let it cook for 2 minutes, and turn off the heat. Sprinkle salt and pepper(if you please), and it’s ready.
While some prefer the gooey yolk in the centre, others like to have it cooked all the way through, for that just cover the pan with a lid, and leave it for another minute after turning off the heat.
(Note: To prevent eggs from sticking to the pan, make sure you are using room temperature eggs, and that the oild is hot enough.)
Could it be more obvious? Well, these beautiful flat cakes are a lifesaver when you want to get out of your boring breakfast routine. And furthermore, what’s good for breakfast tastes equally great for dinner. As the name goes, pancakes are basically cakes prepped without an oven.
1cup all-purpose flour
1/2 cup milk
1tsp vanilla essence
1tsp baking powder
Honey/ chocolate syrup for garnish
Mix the flour, milk, sugar and eggs in a blender
(You can also mix the batter manually, but make sure there are no lumps remaining)
Add 1/2 tsp vanilla essence, and fold it in the batter well.
Now heat a pan; brush the surface lightly with butter and pour a dollop of the batter
Wait till bubbles show up in the top, and then flip it over
Repeat the process with the remaining batter and serve hot
Honey or chocolate syrup added on top makes it more visually appealing and tasty.
(Note: You can also add chocolate/ banana/cherries/blueberries/raspberries in the batter for flavour)
For this recipe you need: an egg
1 tbsp yoghurt(dahi)
1 tbsp chopped onions
1/2 tsp salt
Heat a frying pan, and add 1tsbp ghee
In a bowl whisk the egg and yoghurt, and add some salt
Add the onions to the ghee and saute them for about a minute
Then pour the egg-yoghurt mixture, and let it spread evenly across the pan
Turn down the heat to minimum
Cover with a lid for 2 minutes
Sprinkle some grated (processed) cheese, and cover again
Turn off the heat, but leave the lid on for sometime before serving
Enjoy your delicious yoghurt omelet!
3 hard boiled eggs
2 boiled baby potatoes (or 1 medium)
2tbsp onions (finely chopped)
1tbsp mint leaves (finely chopped)
1tsp mustard sauce
salt & pepper
Chop the boiled eggs in little cubes along with the yolks
Peel the potatoes and chop them in small cubes
Take all the ingredients in a large bowl, and fold them in well
Make sure the mayonnaise and the mustard sauce mixes well with the eggs and potatoes
Garnish with some extra mint leaves
You can have this with toast, or just as a side salad with your main course
Kolkata egg roll
Kolkata is synonymous to words like nostalgia, culture, literature, chai, and good food. So, other than missing home-cooked food Kolkatans residing away form the city also miss the city’s cherished street food. Egg lovers would drool at the mere mention of a lip-smacking egg roll.
1 egg (beaten)
1 cup maida / atta
2 tbsp vegetable oil
1 tbsp chopped coriander leaves
1tbsp onions chopped
1tbsp cucumber chopped
Mix the maida or atta (just a healthier option) with salt and a little oil, then prepare a dough by adding water.
Roll out a paratha and roast both sides slightly.
Add oil to the pan and prepare the paratha.
Once it’s golden brown, remove the paratha from the pan.
Heat a little more oil and add the beaten eggs, sprinkle salt and pepper and press the paratha onto the omelette in the making, and cover the pan with a lid for about 30 seconds.
Remove the paratha from the pan, and lay it on a clean paper on the kitchen counter, egg-coated side on top.
To this, add chopped, onions, cucumber, fried potatoes (optional, I added them to make it more filling)
Squeeze in some tomato ketchup and chili sauce/ chopped green chilies for seasoning
All the ingredients topped on the paratha should be placed on one another lining one side of the paratha. Now, take the paper and roll it up!
